I am considering lowering my 03 GT, and was curious what springs others have used, and likes and dislikes with them. I was debating between Eibach Sportlines, or H&R's. Any comments, and info would be greatly appreciated.

How much do you want to lower it and how stiff do you want it to be?

I am running H&R Supersports. The question Shannon asked is a good one. How much do you want to lower it and what are your expectations for the car (i.e. drag racing, road racing, daily driver, or street/strip weekend warrior?)

It's my wife's daily driver. Not wanting much, just trying to get rid of the gap between the fender and the tire. I've seen a few around, and I've heard that some lower the rear more than the front. I definetely don't want that.

The rear has more clearance that's why some brands lower the rear more to make them look even. Since you are wanting these for your wife's car I recommend the Eibach Sport springs. With them you can keep your stock struts/shocks and will lower about 1 to 1 1/2".
